Sourdough Baking
Sourdough baking is an ancient bread-making method that has gained popularity recently due to its unique flavor and texture. Unlike bread made with commercial yeast, this bread uses a live culture of wild yeast, acetic acid bacteria, and lactobacilli, giving it a tangy flavor and a chewy, moist crumb. I began my sourdough baking journey for my daughter, who is gluten intolerant (not celiac). While this bread is not gluten-free, the fermentation process makes the gluten easier to digest, making it suitable for her dietary needs.
Baking sourdough bread requires patience and practice, but after several months of attempts, I can now bake good loaves consistently. I have also customized conventional Indian recipes like paratha to create a sourdough version.
