The most common version of Indian bread rolls is made with potatoes; however, I use paneer in this recipe and make these bread rolls without potatoes. I also shallow fry these bread rolls rather than deep-frying them. There are a plethora of combinations you can try - choose the type of bread, adjust the spices used, and add other vegetables like carrots! You can also slice them as serve a pinwheel sandwich.

Ingredients
Paneer: Crumbled paneer or Indian cottage cheese is the main ingredient in the filling.
Bread: In this recipe, I have used plain white bread. Brown bread also works well for this dish. For a healthier alternative, use sourdough white bread.
Butter: I use butter to shallow fry the rolls.
Onion and capsicum: Make sure they are chopped finely before using.
Spices: I use garam masala and chili powder. Adjust the quantities as per your preference.
Green chutney: An easy spread made using mint leaves, coriander leaves (cilantro), ginger, garlic, green chili, lemon/lime juice, and salt.
Step-by-step instructions
1. To make the green chutney, blend together coriander leaves, mint leaves, garlic, green chili, lemon/lime juice, and salt using very little water. Set it aside.
2. To make the filling, place the crumbled paneer, onion, capsicum, coriander leaves (cilantro), chili powder, garam masala, and salt.
3. Mix well and bring it together like a soft dough.
4. Pinch out a small portion of the stuffing and roll it into an oval shape. Repeat with the entire mixture.
5. Trim off the edges of the bread. Roll it using a rolling pin.
6. Spread a small amount of mint chutney onto the bread. Place the stuffing on one edge of the bread.
7. Carefully roll the bread.
8. Apply little water to the other edge and seal it completely. Repeat with the rest of the bread slices.
9. Heat a frying pan and add some butter. Place the bread onto it and fry for 1-2 minutes, until golden brown. Serve with tomato ketchup.
Useful tips
The filling in this recipe makes 8-10 bread rolls. You can adjust the quantities as per your preference.
I make an easy green chutney that I use as a spread. You can skip it and use any spread of your choice. You can also use store-bought mint chutney.
Make sure you use very little water when grinding the green chutney. We want it to be slightly thick and spreadable.
Trim the ends of the bread before rolling them. Also, make sure they are rolled thinly and evenly.
Add other vegetables like grated carrot, and boiled corn kernels. Make sure they are cut into small bits or grated and there is no moisture content in them.
These bread roll-ups are great for meal prep too. The green chutney can be made and stored in the refrigerator for up to one week. You can make the filling the previous night and store it in the refrigerator. If you plan to store it for longer, skip onions in the filling. Without onions, the filling can be stored in the refrigerator for up to 5 days.

Ingredients
For the filling:

- Repeat with the entire mixture

- Place the stuffing on one edge of the bread
- Carefully roll the bread. Apply little water on the other edge and seal it completely. Repeat with rest of bread slices

- Carefully flip it and fry on both sides
