    My first time making this dish was a happy accident. I was trying to use up some leftover bell peppers and quickly seasoned it with curry powder and air-fried it. It turned out so good, and now, curry roasted bell peppers are a family favorite!

    Step 1: In a large mixing bowl, add olive oil, curry powder, garlic powder, salt, and pepper. Give it a good mix. To this, add the bell peppers and onions. Mix well, making sure the seasoning is evenly coated.

    Make sure the bell peppers are fresh and firm for this recipe. Also, ensure that they are evenly sliced to promote consistent cooking.

    Arrange the seasoned peppers and onions in a single layer in the air fryer basket. Depending on the size of the air fryer, cook in batches if necessary. For my air fryer, I usually do it in two batches for this recipe.

    If you want your bell peppers to be extra crispy, cook them for a few minutes longer in the air fryer.

    • 2 teaspoon lemon juice
    • 1 tablespoon cilantro (chopped)

    • Wash the bell peppers and cut them in half. Remove the seeds and cut them lengthwise into ½ inch strips. Peel and slice the onion.

    • To this, add the bell peppers and onions. Mix well, making sure the seasoning is evenly coated.
