Curry Roasted Sweet Potato Cubes (Air Fryer)

Air fryer sweet potato cubes are a healthy and delicious side dish that is perfect for any occasion. Prep the sweet potatoes:

  • Wash and clean the sweet potato. Pat dry using a kitchen towel. Peel them and slice off both edges.
  • Cut the sweet potato in half. Place it vertically on the board and cut it into three parts of about ½ inch thickness (see pictures above).
  • Cut each part into ½ inch cubes. Repeat with the rest of the sweet potato.
  • Transfer the cut sweet potatoes to a large bowl. Add the olive oil, curry powder, garlic powder, and salt.
  • Toss them well making sure all the cubes are well coated.

Air fry:

  • Place the cubes in the air fryer basket in a single layer.
  • Air fry at 400 F (200 C) for 12-15 minutes. Shake the basket once midway.
  • Serve immediately.

Notes

Sweet potatoes: Use large sweet potatoes they will have more flesh and will be easier to cut into cubes. Peeling the sweet potatoes will help them to cook evenly and will also remove some of the bitterness.
Evenly-sized cubes: Cut the sweet potato cubes as uniformly as possible to ensure even cooking. This way, all the cubes will be cooked to perfection without some being undercooked or overcooked.
Don't overcrowd the basket: Avoid overcrowding the air fryer basket, as this can lead to uneven cooking. It's better to cook the sweet potato cubes in batches if needed, ensuring they have enough space to get crispy and cook evenly.
Shake or flip halfway: About halfway through the cooking time, shake the air fryer basket or flip the sweet potato cubes to ensure they cook evenly on all sides.
