Curried Egg Sandwich

This curried egg sandwich is a flavorful variation of the classic egg salad sandwich.   • Peel the hard-boiled eggs and place them in a large bowl. Mash them using a potato masher or fork.
  • To this, add mayonnaise, curry powder, cilantro, and salt. Mix well.
  • Take the slices of bread and spread them with butter. Divide the egg mixture into 2 parts and spread them on 2 slices.
  • Top with lettuce and cover with another slice of bread.
  • Trim the edges and cut the sandwiches into the desired shapes. Egg sandwich is ready to be served.

Notes

Balance smoothness and texture when mashing the boiled eggs. Leave some small chunks of the egg for an added bite in the sandwich.
Curry powders can vary in intensity and spiciness depending on personal preference. Start with a smaller amount of curry powder and gradually add more to achieve your desired flavor and heat level.
Use your favorite bread to make this egg sandwich. Some of my favorite picks are brown bread, regular or sourdough sandwich bread, and seeded sourdough bread.
