For the green chutney:

For the rolls:

  • 8-10 slices bread
  • 3-4 tablespoon butter

Instructions

Prep

  • To make the green chutney, blend together coriander leaves, mint leaves, garlic, green chili, lemon/lime juice, and salt using very little water. Set it aside
  • To make the filling, place the paneer in a large bowl and crumble it
  • To this, add onion, capsicum, coriander leaves (cilantro), chili powder, garam masala, and salt
  • Mix well and bring it together like a soft dough

Making the rolls

  • Pinch out a small portion of the stuffing and roll it into an oval shape. Take care the length of it is almost the same as the bread (see step-by-step images)
  • Repeat with the entire mixture
  • Trim off the edges of the bread. Roll it using a rolling pin
  • Spread a small amount of green chutney onto the bread
  • Place the stuffing on one edge of the bread
  • Carefully roll the bread. Apply little water on the other edge and seal it completely. Repeat with rest of bread slices

Frying the bread roll

  • Heat a frying pan and add some butter. Place the bread onto it and fry for 1-2 minutes, until golden brown
  • Carefully flip it and fry on both sides
  • Serve with tomato ketchup or dip of your choice

Notes

The filling in this recipe makes 8-10 bread rolls. You can adjust the quantities as per your preference.
Make sure you use very little water when grinding the green chutney. We want it to be slightly thick and spreadable.
Trim the ends of the bread before rolling them. Also, make sure they are rolled thinly and evenly.
Add other vegetables like grated carrots and boiled corn kernels. Make sure they are cut into small bits or grated, and there is no moisture content in them.
